Tomates crevettes

Serves: 6 as main dish or 12 as a starter

Ingredients:
12 large red tomatoes
800g peeled gray (dutch) shrimps
2 tbsp light mayonnaise
3 tbsp finely chopped parsley
Salt
Ingredient replacement:
Ingredient note: Traditionally the tomatoes should be peeled. Therefore, if you have time simply peel them before proceeding with the described recipe.
How-to:
1. Cut off the top of the tomatoes. Remove the pulp. Season with some salt and let them rest cut side down in order to loose some of their water.
2. In the meantime mix the shrimps with the mayonnaise and the parsley until uniform. Let rest for 10’.
3. Fill the tomatoes with the shrimp salad and serve immediately or store in the fridge till serving.
